Chocolate Christmas Pudding Cupcakes! | Cupcake Jemma

hello and welcome to Christmas basically it's finally arriving and I'm feeling festive I've got my festive jumper I'm a festive thingamabob on top of my head I think we're pretty festive all around

Really so why not let's make something festive – right now I'm gonna make some Christmas pudding chocolate cupcakes and these guys are so so cute so these cupcakes are based on my regular chocolate cupcake recipe but with a few

Very Christmassy things added in for good measure make it super festive and as usual with this recipe it's a wet or dry combined job' so I'm gonna start by putting all my wet ingredients into this bowl and I have some buttermilk I've

Also got some vegetable oil and some brewed coffee which is cooled down now and then one large free-range egg goes in and then you need to whisk it all to combine it so the first festive ingredient I'm pursuing here is some

Orange zest which is I'm just going to use like almost a whole oranges worth for the zest you could use a whole it might just see a little bit on the punchy side and now I'm going to put my dry ingredients in and I'm actually just

Gonna sift them straight into the bowl through a sieve obviously so I'm going to start with some plain flour some sugar and some cocoa powder and I also have some salt and some bicarbonate of soda and then last but not least at the

Trinity the Holy Trinity of Christmas spices so I've got some ground ginger and some clothes and this is gonna obviously make this taste super Christmasy so they all go in and then just shuffle that purposive and now just

Whisk that all together until it's thoroughly combined good already right so this is obviously quite liquidy so I like to pour it into a jug and kind of scoop it into my paper places and once you've distributed evenly among

Your 12 cupcake cases you need to bake these at 150 degrees C for around 20 to 22 minutes until they're nice and springy on the top welcome back now it's time to make the buttercream and it wouldn't be Christmas without a little

Bit of brandy obviously some of you out there might not want to use brandy or any kind of alcohol so for this recipe just switch out the brandy for something like orange juice but I really like the flavor of the brand I don't drink but I

Really like the flavor of the brandy with all the Christmassy flavors just great so as normal I'm gonna start with my soft unsalted butter which I'm gonna beat for about five minutes until it's

Really really pale and fluffy right that's looking lovely and pale and fluffy so now I'm going to add my icing sugar in 2 stages I've sifted it already

And you want to beat this for about 3 minutes after each addition right this is ready to go so I'm gonna put the liquid in it and obviously normally I would use whole milk but because this is brandy buttercream I'm

Using brandy you could obviously use whiskey as well something like that and something Christmassy of course so I'm going to start by putting two tablespoons in giving it a little mix and then see if it needs more

my goodness me this smells amazing so obviously if you've used brandy and it's gonna smell really nice and Christmasy already this buttercream and now is like beautiful and silky and

White so I'm just going to put that into a piping bag clear the decks and then we'll finish it off right so I've got my butter cream in a piping bag with a big round nozzle on the top and the first stage of the decoration is just going to

Be one round blob so here we go now before we do the next bit which is to dip them in chocolate I'm gonna put these in the fridge you can put them in the fridge for about 10 or 15 minutes or into the freezer for like five just to

Stiffen them up a little bit so these have come out of the freezer so they're not completely frozen they're just a little bit firmer to the touch because the next bit is to dip them in melted chocolate and I didn't want the very

Soft buttercream you're gonna blob off into my chocolate so I have some dark chocolate which is actually a curvature chocolate which is 50 step 55 percent cocoa solids rather than 70 but feel free to use 70 if you want it's also got

A little bit of cocoa butter in it just to help it sort of stay liquidy and I'm going to dip these guys in and then put them in the fridge for about five or ten minutes before finishing them off

Once your chocolate is set you can finish your cupcakes off with a splattered white chocolate and some little Halloween decorations

And there it is the finished adorable little cute Christmas pudding cupcake not only looking like a little Christmas pudding but also tasting really Christmassy so please give that a go if you do take a picture put on Instagram

Use the hashtag cupcake Gemma I will be back next week with another festive treat for you so I will see you then in the meantime there hope you make lots of these just keep making them until Christmas they finished back
